1 loaf of Italian bread or baguette, sliced
2 ripe tomatoes, diced
1 cloves of garlic, minced
Fresh basil leaves, chopped
Extra virgin olive oil
Balsamic vinegar (optional)
Salt and pepper to taste
Preheat your oven to 375 degrees. Slice break into ½ inch thick pieces. Brush generously with olive oil and salt. Place in the oven for 8 mins until they get a little color on the edge. Remove from oven and rub the top surface of each bread with one of the garlic cloves. Put aside to cool.
Dice the tomatoes and let them sit in their own juices with a pinch of salt and your favourite olive oil. We like Colovita extra virgin. Toss in clove of garlic that is shredded using a micro plane, or mince.
Spoon the tomato mixture onto each bread slice. Top with some fresh basil and serve immediately. Buon appetito
