1 pound (450g) of good quality dried spaghetti (or any pasta of your choice)
1 cup (120ml) extra virgin olive oil
8-10 cloves of garlic, thinly sliced and preferably shaved on a mandolin for uniform size
1/2 pound or 2 cups of diced tomato
1 teaspoon red pepper flakes (adjust to taste)
Salt, to taste
Black pepper, to taste
Fresh basil, chopped, for garnish
Grated Parmesan cheese, for serving (optional)
Step 1
Bring a large pot of salted water to a boil.
Step2
Cook the pasta according to the package instructions until al dente.
Step 3
Reserve about 1 cup of pasta cooking water before draining.
Step 1
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Step 2
Add the sliced garlic. Let it toast in the oil evenly until golden, careful not to over cook or over stir the garlic. This should take about 2-3 minutes.
Step 3
Add chili flakes, diced tomatoes, and pasta water. The pasta water will stop the garlic from cooking which is important. Lower the heat to simmer.
Step 4
Once the pasta is cooked, drain, and toss the pasta in the garlic-infused oil. Stir until well coated and the liquid is reduced. If the pasta seems dry, add the reserved pasta cooking water a little at a time until you reach the desired consistency.
Step 5
Season the pasta with salt and black pepper to taste. (Pro tip: Taste dish first before seasoning with additional salt because the salt from the pasta water can often be enough.). Garnish with torn fresh basil for a burst of freshness. Serve immediately.
