3-minute feta
Creamy feta in the brine
Extra virgin olive oil
A few dry red chilies or crushed red pepper flakes instead

Feta cheese is a brined, tangy cheese that originates in Greece and is traditionally made from sheep’s milk or a mixture of sheep’s and goat’s milk. The best feta for this recipe is a block of creamy Greek feta stored in the brine.
Step 1
Slice or cube the feta and place in mason jar or convenient container of choice.
Step 2
Combine the feta with olive oil, dried herbs and chile pepper. Mix around ½ cup good extra virgin olive oil with lemon zest, dried oregano, and fresh parsley, and dry chiles (feel free to omit chilis if you do not spicy foods). Pour the olive oil mixture over the feta. If needed, top with more olive oil to cover the feta completely.
Step 3
Allow it to marinate. Seal the jar tightly and store in the fridge for 24 hours before using. This allows the flavours to infuse into the cheese. If you are short on time, leave it room temp for 30-60 mins.
Step 4
Serve at room temperature. Take the marinated feta out of the fridge about an hour before serving so it can reach room temperature.
Step 1
Trim and peel a medium-sized zucchini. Use a vegetable peeler or a mandoline slicer to carefully slice the zucchini into thin, long ribbons.
Step 2
Place one zucchini ribbon on your cutting board. Place a cube of marinated feta on the short end closest to you. Roll away from you to fully encase the marinated feta. Repeat until you have used all of the zucchini ribbons.
Step 3
Gently slide 3 of the zucchini-wrapped feta cubes onto a small bamboo skewer.
Step 4
Brush a cast iron griddle or grill pan with a little olive oil. Heat to medium-high.
Step 5
Assemble the zucchini skewers on the heated surface and cook for a couple of minutes on each side or until the zucchini layer gains some color.
Step 6
Serve warm or chilled, with the rolls still on their skewer. (we prefer warm!)
